Gelato or ice cream, and why they taste different

Melbourne has plenty of both and the words get used as if they were interchangeable. They are not. Two things separate them, fat and air, and a third, temperature, decides how much of it you taste.

Less fat, and much less air

Gelato is churned more slowly than ice cream, so far less air ends up in it, and it is built on a leaner base with less fat. Denser and leaner at once, which is why a small serve of gelato can feel like more than the same volume of ice cream.

Fat coats, air lifts

Fat coats your tongue and lets flavour arrive slowly and stay, which is what makes ice cream taste round and creamy. With less fat in the way, gelato releases its flavour faster and reads sharper and more intense. Neither one is the better food. They are answering different questions.

Served warmer, on purpose

Gelato is held and served warmer than ice cream. Cold numbs the palate, so at that density the warmer serve is what lets the flavour read at all. It is also why gelato softens quickly once it is out of the cabinet, and why ice cream can be eaten straight from the freezer without tasting of nothing.

Which one you actually want

If you want the flavour loud and the serve small, gelato earns it. If you want something that holds its texture, travels, and is still good twenty minutes after you took it out, that is ice cream, and it is the reason the freezer aisle is built the way it is. Ours is the second kind, on purpose: a single serve cup meant to be eaten away from a counter.

Is gelato healthier than ice cream?

Not automatically. Gelato usually carries less fat, but it also carries less air, so a given volume holds more of everything else, sugar included. Compare per serve rather than per 100 g.

Why is gelato served warmer than ice cream?

Because cold numbs the palate. At gelato density, serving it warmer is what lets the flavour come through.
